Ingredients

1/2 pound Shiitake mushrooms, washed and sliced

2 tablespoons vegetable oil

3 cloves organic garlic, minced

1 tablespoon ginger root, grated

1 head Bok Choy or 3 bunches Baby Bok Choy, chopped into 1" pieces

1/4 cup organic red bell pepper, chopped

1 bunch organic green onions, chopped, green and white parts

1 tablespoon dark sesame oil
-
2 tablespoons sweet sherry

2 tablespoons soy sauce
-
Salt and pepper

10 ounces Yakisoba Noodles, original flavor, cooked according to package instructions

2 tablespoons sesame seeds
Directions
In a large skillet, sauté the mushrooms in the oil for 3-5 minutes.
Add the garlic, ginger, bok choy, red bell pepper, green onions, sesame oil, sherry, soy sauce, salt and pepper. Stir-fry until the bok choy and peppers are tender, about 5-8 minutes.
Add the noodles and toss. Sprinkle the sesame seeds on top and serve.
