This is an easy, vegetarian filling that pairs well with our Tamale Kit to make a batch of tamales. Top it off with some spicy Hatch Salsa from Hatch, New Mexico!
Ingredients

2 cups sharp cheddar cheese, shredded

2 cups Swiss Cheese, shredded

6 ounces black olives, chopped

6 ounces pine nuts, chopped

2 Perfect Sweet Onions, Hatch Sweet Onions, or any Sweet Onions chopped

8 cloves peeled garlic

2 tablespoons dried oregano

2 tablespoons ground cumin

1 (8 ounces) can whole corn kernels, drained

4 Anaheim Peppers or Pasilla Peppers, roasted, seeded and chopped

2 teaspoons olive oil

Melissa's Tamale Kit (optional)
Directions
Combine all ingredients in a large bowl, spread on prepared masa dough and husks, fold and steam for 1 hour.
Recipe Note
Melissa's Tamale Kit is a nice option if you choose not to purchase masa and husks from your ethnic grocer or panaderia. The Tamale Kit contains wrappers and masa to make 12 tamales.
