Ingredients

1 1/2 teaspoon olive oil

1/8 teaspoon crushed red pepper

6 cloves organic garlic, minced

1/2 cup organic green onions, sliced

1/3 cup shallots, chopped

2 pounds organic green beans, cut into 2 inch pieces

6 ounces Crimini Mushrooms, sliced

12 Organic Cherry Tomatoes, halved lengthwise

2 packages organic baked tofu, cut into julienne strips

1/4 cup dry sherry
-
1 tablespoon tamari
-
6 large basil leaves, snipped
Directions
Preheat oven to 350 degrees.
Heat oil and crushed pepper in a large stovetop and oven-safe casserole over medium-high heat for 1 minute. Add the next three ingredients and sauté 2 minutes.
Add carrots and green beans, and cook 5 minutes. Add mushrooms, tomatoes, and tofu, and cook 5 minutes. Add sherry and remaining ingredients; stir and cook 2 minutes.
Cover, and bake 30 minutes.
Serve with rice or noodles.
