4 eggs
7 cups milk
1 cups sugar
12 tbsp. tapioca
1 2/3 tbsp. vanilla extract
4 cup heavy cream
1 tbsp. lemon, zested
Whisk well, egg, cream, milk, lemon zest in a sauce pan, let rest.
Now whisk in the sugar until fully blended.
Bring to a full boil, do not walk away. Stir constantly for one minute.
Remove from heat, now whisk in vanilla extract.
Put into a large glass bowl or individual serving dishes. Cover pudding with saran wrap touching pudding surface.
Chill for 2 hours.
To store a zested lemon, wrap tightly in plastic wrap and refrigerate, or use its juice within the week to brighten dressings, soups, sauces, drinks, etc. You can also freeze only the juice in a small ice cube tray, then transfer to a freezable bag and use as needed within six months. Don't forget to label and date the bag contents!
