Directions
Preheat oven to 350ºF.
Make the Filling
In a large bowl, combine the sugar, flour, cinnamon and nutmeg. Add the apples and mix well. Set aside.
Make the Topping
In a bowl, add the flour, butter and piloncillo. Using a fork or a pastry cutter, mix until crumbly, like coarse meal.
Pour the apple mixture into the pie crust and dot with the butter. Sprinkle with the topping and place in the oven.
Bake for 45 minutes to 1 hour or until crust is golden brown and apples are cooked through.
Let cool and serve. Place one pie wedge on a plate, drizzle with caramel sauce and add a scoop of vanilla bean ice cream.
Recipe Note
Chef's tips:
- If Granny Smith apples are not available, Pink Lady or Fuji apple varieties will also work, though a tad sweeter.
- If your crust begins to brown too soon, tent the pie with foil; do not seal. This will allow the pie to continue to bake without steaming.
- Piloncillo: it is easiest to grate the piloncillo to yield the quantity needed. Make certain your container and grater are on a non-skid surface for better grating traction.
