1 package crepes
1 pint organic strawberries, sliced
10 Kiwi Berries, peeled and sliced ( or sub with 4-5 small kiwis)
2 cups heavy cream
1/2 cup granulated sugar
2 teaspoons pure vanilla extract
In a Kitchen Aid or with a hand mixer, whip the cream to medium peaks.
Add the sugar and the vanilla and whip to stiff peaks.
Gently fold in the berries, place in the center of a crepe and roll up. Repeat for the remaining crepes.
I like to garnish with more fruit, some passion fruit sauce, and a dollop of whipped cream!
