Ingredients

⅔ cup pitted dates

½ cup raw walnuts or pecans

1 cup shredded unsweetened coconut, divided

¼ cup roughly ground coffee beans

¼ cup cacao nibs

⅓ cup dried Goji berries

½ teaspoon sea salt or smoked sea salt, such as Maldon

2 teaspoon maple syrup

1½ tablespoon coconut oil

⅓ cup hemp seeds
Directions
Scatter the dates, nuts and ½ cup of the coconut in the bowl of a food processor. Process until the ingredients become intermingled and about the size of the goji berries.
Across the top of the date mixture, sprinkle the goji berries, coffee, cacao nibs and salt.
Run the processor until the ingredients come together and break down to approximately the size of the shredded coconut. At this, stage, the mixture should be tacky and be falling inwards from the sides of the food processor. Try rolling a ball together and see if it will hold together.
Add the maple syrup and the coconut oil and give the mixture another couple of pulses.
Refrigerate the mixture and cover with plastic wrap for 2 hours – overnight.
Combine the hemp seeds and the remaining cup of shredded coconut on a plate.
Scoop out the mixture with a ½ teaspoon-sized measuring spoon, roll into balls, and roll in the coconut and hemp mixture. (To make the rolling a little easier, try lightly misting your hands with Pam or another cooking spray).
Energy balls can be stored in the refrigerator for up to a week.
