1/4 cup water
1/2 cup sugar
1 cup mashed potatoes
10 egg yolks
1 teaspoon ground cinnamon
Make a sugar syrup by boiling the water and adding the sugar, stirring until the sugar dissolves. Empty the mashed potatoes into the syrup and stir, cooking for approximately 3 minutes. Remove from the heat. Beat the egg yolks together with 1/4 teaspoon of the cinnamon.
Put the potato mixture back on the stove and with a wire whisk, beat the eggs into the potatoes and continue whisking until the eggs are finished cooking (a few minutes). Spoon the mixture into serving dishes and sprinkle with the remainder of the cinnamon. Serve warm.
