6 medium apples, peeled, cored, and sliced (Granny Smith or Honeycrisp work well)

1/4 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon lemon juice
2 tablespoons all-purpose flour
1 cup all-purpose flour

1/4 cup brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cubed
1/3 cup boiling water
Vanilla ice cream or whipped cream
Preheat Oven: Preheat your oven to 375°F (190°C).
Prepare the Filling: In a large mixing bowl, combine the apple slices, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and flour. Toss the apples until evenly coated. Pour the apple mixture into a greased baking dish.
Make the Topping: In another bowl, mix the flour, granulated sugar, brown sugar, baking powder, and salt. Add the cold cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. Pour in the boiling water and mix just until combined.
Assemble the Cobbler: Drop spoonfuls of the topping over the apples, covering as much as possible. Don’t worry if some apple filling peeks through; it will bake beautifully.
Bake: Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the topping is golden brown and the apple filling is bubbly.
Serve: Let the cobbler cool slightly, then serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
