A Toast to Summer Fruit

By Mark Mulcahy

I woke up one morning a few weeks back and was inspired by the food I brought home from a recent trip to the produce aisle. This time of year there is so much of Melissa’s organic bounty to choose from! It can be difficult to choose just a couple of items for any meal with so many choices, but I was able to narrow it down and this is what I came up with as I created my delicious breakfast.

What a creation it was! I loved it so much that I surprised my daughter with it at work, and made it to share with my fellow An Organic Conversation radio hosts Helge and Sita one morning last week - as well as with the hotel staff where we had our temporary office. It was greeted with oohs, ahs, mmm's, and statements that "this is one of the best breakfasts they’ve had..."

And so I wanted to share it with you while Melissa’s still has these items at their peak for you to enjoy.

You’ll need
Melissa’s Organic Peaches
Melissa’s Organic Blackberries (or Strawberries)
Local Multigrain Sourdough Bread
Local Organic Amber Honey
Fresh Ground Organic Almond Butter

How to build your amazing breakfast toast
  1. Slice peaches into ¼ thick slices
  2. Wash blackberries
  3. Lightly toast 2 slices of multi-grain sourdough bread
  4. Spread almond butter over the toast
  5. Place peach slices on top leaving about ½ inch per slice
  6. Place two black berries in between each peach slice
  7. Drizzle generously with local honey
  8. Put on a plate and find a place in the morning sun to enjoy every warm toasty bite.
When you finish, hatch a plan of who you’re going to share it with.

In peachy, gooey goodness, Mark.
