Ingredients

2 organic pineapples

2 organic limes juice, freshly squeezed

2 cups Flat Low-Sodium Club Soda (do not substitute)

1/8 cup sugar (optional, see Author's Notes)

Directions
If buying whole fruit: peel the pineapple and remove the "eyes" and core.
Cut the flesh into 1-inch cubes and place in the blender.
Add the lime juice, half the club soda and purée until smooth.
Strain through a sieve, and press the juice through with a wooden spoon if necessary.
Cover and place the juice in the refrigerator for at least one hour.
Add the remaining 1 cup of club soda and sugar.
Serve in glasses filled with ice, or use as a base for margaritas.

This refreshing, fresh fruit drink is often served in Mexico with meals, or used as the base for pineapple margaritas - it’s the secret ingredient of the finest hotel bars in Mexico. (If used as a mixer for pineapple margaritas omit the sugar.) To make the soda flat, leave the cap off the bottle for at least 2-3 hours before use. To extract the most juice possible from the limes, roll them firmly on the counter with your palm, or pierce with a fork, place in a bowl and microwave for 10 seconds before juicing.
