16 ounces Harry’s Berries, sliced
2 cups sugar
1 cup white balsamic vinegar
In a medium bowl, mash berries with a muddler or fork. Add sugar and stir to combine. Transfer mixture to a 1-quart jar and all berries to macerate overnight.
Strain juice through a fine-mesh sieve or cheesecloth. Add vinegar and adjust to taste by adding more vinegar or more sugar. It should taste sweet and sharp, but not like you’re drinking vinegar.
Pour shrub into a clean jar, seal and refrigerate for about 1 week to allow the flavors to come together.
To make a refreshing alcoholic or non-alcoholic beverage, pour 2 tablespoons of shrub into a glass. Slice 2 strawberries and muddle into the shrub. Fill glass with ice and top off with sparkling water, club soda or ginger ale. For an alcoholic beverage, add 2 ounces of gin or vodka. Top with more strawberries.
