Thinly sliced jack fruit pods give a twist to this classic appetizer or snack.
Ingredients

1 cup Veggi Chicken Strips, or Jackfruit Pods, finely sliced

3 slices non-dairy cheese, jalapeno or spicy, preferred

1 each Hatch Chile Pepper, roasted, peeled, seeded, and cut into strips

1 whole grain tortilla (10 inches)
Directions
Preheat a non-stick skillet on a medium heat. Lightly oil cooking surface.
Place tortilla down on the skillet. Let it heat through about 15 seconds.
Flip the tortilla over and distribute cheese evenly over the tortilla, leaving half an inch margin around the edges.
Lay down the pepper strips over the bottom half of the tortilla. Place veggie strips or jackfruit pods on top of peppers.
When cheese has just about melted, flip one half of the tortilla over on top of the other.
Allow cheese to continue melting for about 1 minute. Cool slightly, then slice into wedges and serve warm.
