1 cup real mayonnaise

3 each Chipotle Chiles In Adobo, minced

1 clove Melissa's Peeled Garlic, minced
For the Dipping Sauce
Directions
Wash artichokes under cold running water. Trim the base and tops of the artichokes.
Bring a large pot of water to a boil. Squeeze the lemon and lime into the water and then drop them into the water. Next add the salt and Italian seasoning to the water.
Place the trimmed artichokes into the boiling water. You can place a pot lid into the pot to keep the artichokes submerged. Cover the pot with the lid and let artichokes cook at a high simmer on the stove until they are tender.
Cooking time can vary, depending on the size of the artichokes.
A good approximation is 30 minutes for a medium-sized artichoke or 45 minutes for a jumbo-sized artichoke.
You will know the artichokes are cooked when a sharp knife goes through the artichoke base with ease.
To Make the Dipping Sauce
Mix all of the dipping sauce ingredients in a bowl and serve with the cooked artichokes.
Recipe Note
Traditionally, melted butter is served as the dipping sauce but this dipping sauce is a welcome change.
