These bright-colored edible roots are generally labeled either sweet potatoes or yams—but, in fact, true yams are part of a different botanical group.

The jewel variety is known for copper-colored skin and bright orange flesh. Like most orange-fleshed varieties, the flesh of the jewel sweet potato is very moist and sweet when cooked (although less sweet than a garnet sweet potato).

This variety is great for Thanksgiving sweet potato pie, candied, baked, roasted or mashed. Learn how to cook sweet potatoes here.

Sweet potatoes are a source of potassium and vitamin A.

To store, do not refrigerate. Keep in a basket in a well-ventilated area. Use within one or two weeks for optimum quality.
